7 ounce jar diced pimentos
1pint of REAL mayonnaise
1.5 lbs. of extra sharp Cheddar Cheese
Optional, add fresh jalapeño for spice
Combine all ingredients in food processor or blender.
Blend until slightly smooth.
Serve with crackers, toast, or on celery.
Do NOT even think about substituting reduced fat mayonnaise or cheese in this recipe. It will be terrible-too much water and the consistency isn't right!
