Potato Latkes from Marsi Archer

"This is my aunt's recipe. We have made these for years at Chanukah and will also eat them at other times of the year. I feel connected to my aunt and my grandmother when I make these." - Marsi A.



3 potatoes, grated
1/4 cup onion
1 tsp salt
2 Tbsp flour
1/4 tsp pepper
2 beaten eggs


  1. Grate potatoes into cold water.
  2. Drain well and measure 3 cups of potatoes.
  3. Add other ingredients and mix.
  4. Fry in hot oil.
  5. Drain on paper towels.
  6. Serve with sour cream and apple sauce.
