Zucchini Pie from Tessa Tisdale

"When you cook zucchini like this, it tastes a lot like apple. It is a lot of fun when we make this pie. When we will have it with someone else, we do not say what type of pie it is, but they always think it is an apple pie. They sometimes ask where we got the apples, and then we say that it is not an apple pie but a zucchini pie, and their minds blow! It is a lot like an apple pie, but it does not require peeling a lot of apples and coring them and cutting them. You just need to peel one or two zucchini, scoop out the seeds, and chop them up." - Tessa Tisdale

Ingredients

1 pie crust
4 cups peeled and chopped zucchini
3/4 cup sugar
2 tablespoons lemon juice
1 teaspoon cinnamon
1 cup flour
1/2 cup brown sugar
1/2 cup butter

Directions

  1. Heat oven to 400 degrees
  2. Mix the zucchini, sugar, lemon juice, and cinnamon, then put in the pie crust.
  3. Mix the flour, brown sugar, and butter, then sprinkle over the pie.
  4. Bake for 40 to 45 minutes.
